Chè is how a Vietnamese meal ends: a glass of crushed ice with beans, tubers, jellies and coconut milk. Sweet and cold. After a salty grilled-seafood dinner and a day in the sun, it's exactly what the body is asking for.

Chè shops open in the evening and cluster in the central district. There's no need to hunt a famous one. Most cook fresh daily. Order chè thập cẩm if you don't know what to pick; it puts a bit of everything in one glass.

On ordering: chè thập cẩm is the safe choice because it puts a bit of everything in one glass. Beans, taro, jelly, coconut cream, crushed ice. For something lighter, ask for mung bean or taro. It costs 15,000–30,000₫, cash.

This is an evening thing, roughly 17:00–22:00, and it comes after a savoury meal: especially after grilled seafood or a plate of snails, when you have been eating salt all night. Most cook their own each day, so quality is fairly even, but if you would rather have an address than go looking, the six shops at the foot of the page are where to start, and the notes say which is worth the trip.

    27 Le Quy Don, open 8:30–22:00. The menu is long and the durian chè is what people order most; at around 30,000₫ a glass it sits at the top of this list on price. Quality is uneven: some people eat well, others have had spoiled jackfruit and left the bowl. At midday there is no shade for a parked bike. If you want the modern chain style of chè it works; if you want the Nha Trang glass, Cứu Đói or Cô Tư are closer to it.

    166 Hoang Van Thu, west Nha Trang. A wide menu with plenty of jellies and easy to mix to taste, and it is less sweet than most, which makes it the right place if sugar is not your thing and the wrong one if it is. The Thai-style chè is lighter and less rich than the Da Nang version. They also sell Da Nang-style noodles with fermented anchovy sauce, and that gets real praise. It prices above the plain shops, and the owners are welcoming.

    4 Quang Trung, set inside a housing compound, so it is hard to spot from the street. It has been open more than twenty years, and the house dish is iced mixed chè with hot glutinous dumplings. Rich, chewy, hot and cold at once, and nothing else here does it. The seaweed jelly is worth ordering too. One specific tip: it opens at one in the afternoon but is better after two, once the dumpling dough is hot and soft. The owner is elderly and can be brusque, and in the afternoon there is no bank transfer.

    Block CT4, unit 47E on Thich Quang Duc street in the VCN Phuoc Hai development. Far from the centre, but right on the road and easy to find. A young shop, carefully decorated, and what is worth saying is that the coffee is better than a chè shop needs it to be: the 28,000₫ bạc xỉu gets named repeatedly, and so does the egg-cream coffee. The chè is good and cheap for the area. One note: the young-coconut chè leans on tapioca and jelly, with less coconut than the name promises.

    34 Ngo Duc Ke, and the name is the signboard rather than anyone's verdict. This is the cheapest bowl on the list: 8,000₫, and 8,000₫ for years, in a reasonably large glass, with mung bean, black bean and mixed, plus house-made soy milk. The customers are almost entirely students and locals. Low stools, a plain shopfront, and not over-sweetened. If you want to know what chè in Nha Trang actually is, come here before the 30,000₫ places.

    3-4 Hung Vuong, opposite the night market, open 6:30–22:00. The position is its clearest strength; beyond that I would leave it for last. The 30,000₫ fruit chè carries only a few small pieces of fruit, everything is tipped into one glass so nothing tastes of itself, and staff solicit customers at the gate. It is worth checking the bill. There are better places on this list at lower prices.

    24 Luong Dinh Cua, on the corner, open 7:00–23:00. The longest hours here. The owner has been cooking chè for twenty-five years, and a glass is 7,000₫. The range is wide, but the bean chè is the one to order. This is a neighbourhood chè shop, and along with Chè Cứu Đói one of the two that has kept both the price and the taste of the plain version.

    The furthest out on this list. 766a is at the far end of 23 Thang 10, so it is a ride rather than a walk. In exchange it runs to 22:30 and is the one evening address worth the trip on that whole road, which is why the evening-snacks page points here too.
