Коротко о месте
Nha Trang faces east, so the sun comes up out of the sea and the sunrise here is worth more than the sunset. First light is around 5:20 in summer, 6:10 in winter. If you are on the beach at that hour the question is not which café is good but which one is open.
The earliest is Anh Coffee Roasters at 140 Hoang Hoa Tham, open at 5:30. Before first light in winter. It is also the best coffee in this group: a small shop that roasts its own, where you order the espresso tonic or the cold brew. Remember that it shuts at 17:30 and loses its seats by mid-morning. If you want somewhere at four in the morning there is nothing: the earliest opening in the city is 5:30.
For the sunrise itself, head north. Coffee Baka sits inside the Hòn Chồng scenic area and opens at 6:00, which puts it closest to the rocks; a few hundred metres away on Pham Van Dong, Cà phê Hòn Chồng View opens at the same hour, looks at the same headland, and carries the cheapest board on any of these café pages. Black coffee at 23,000₫. Neither is here for the coffee; they are here for watching the sun come out of the water.
If you want one address that works at dawn and at night, four run 6:00 to 23:00, seventeen hours straight: both CCCP Coffee branches at 22 Tô Hiến Thành and 112 Hong Bang, Cedruss at number 10 on the same Tô Hiến Thành, and Metrang at 22 Pham Van Dong. Three of the four are minutes apart on foot, so if you are staying nearby you can stop remembering hours. Minimal Coffee Roasters at 58 Dinh Tien Hoang also opens at 6:00 and pours better than any of them, but it is small and shuts at 21:30. A takeaway stop.
Three more 6am cafés sit in three different directions, and all three are places to settle into rather than to grab from. Góc Của Mây, down lane 93 off Nguyễn Thị Minh Khai, is the most central of them: a large tree planted in the middle of the room indoors, and a small stream running through the yard with tables set at its edge. Vũ Garden in the Mipeco district to the south is a Japanese-style garden with a red timber bridge over a koi pond, and the cheapest café on any page of this site. Đường Sắt Coffee at 707/1 đường 23 Tháng 10 is 8 km out, built on a railway theme with a real length of track indoors and a big ball pit for children. Not to be confused with Quán cà phê Đường Tàu at 66a Nguyễn Trãi.
One more thing before you save a place for the afternoon: four shut before 18:00. Anh Coffee Roasters at 17:30, then Sweet Secret, Mokuzo Kafe and K cafe at 18:00. All four are worth the trip; the trip has to be in the morning. If you need an evening seat, see cafés that stay open late.

Nothing opens before 5:30, so for coffee at four in the morning you will have to ask your hotel.
Where do you drink coffee for the Nha Trang sunrise?
The city faces east, so the sun rises out of the sea, and the best seats are north: Coffee Baka inside the Hòn Chồng grounds, and Cà phê Hòn Chồng View a few hundred metres away on Pham Van Dong, both open at 6:00. Can these opening hours be trusted?
The hours come from the seven-day table each shop publishes about itself, looked up by place id rather than by name. This list holds two shops called AN Cafe and two called CCCP Coffee, and a name search reads the wrong branch. Only one varies by day: Cà Phê Gốc Tiên, at 6:00 or 6:30. Hours a shop publishes can still be wrong, so ring ahead if you are travelling for it.
