Overview
Traditional Vietnamese coffee is dark-roasted robusta, often roasted with butter and sugar, which is where the burnt-caramel note comes from. The five shops here work differently: they roast their own, name the varietal and the growing region on the board, and pour Italian espresso alongside the phin. Not better. A different thing. If you drink specialty coffee at home, this is where the familiar taste is; if you like it sweet and strong in the Vietnamese way, order the phin rather than a latte.
If you go to one, go to Anh Coffee Roasters at 140 Hoang Hoa Tham. The board runs two lines: a Classic Blend of Vietnamese robusta, and a Seasonal Blend of Ethiopian with Vietnamese arabica, and the cold brew is on Ethiopian or Kenyan beans. Order the espresso tonic. Black coffee 28,000₫, espresso 40,000₫, flat white 60,000₫, oat milk for 5,000₫ more. It opens at 5:30, the earliest in the city, but it is small and loses its seats by mid-morning, and it shuts at 17:30.
The other four answer four different needs. To sit a while or come with a group, Alam Coffee Roastery on the Sinh Trung – Thong Nhat corner: it takes most of a building, with windows on all four sides so it stays cool all day without air conditioning, and it is the only one of the five you can settle into: parking is the one problem. For a takeaway before work, Minimal at 58 Dinh Tien Hoang, open at 6:00. North of the river, Nora at 85 Doan Tran Nghiep is the nearest decent cup, open to 22:00. And inside the tourist quarter there is only Cà phê Xưởng 1925 at 23B Biet Thu, the seating is the pavement under the trees, espresso is 30,000₫, and they keep oat milk, which few places here do.
Check the hours before you set out, because this group closes earlier than the rest of the city: Anh Coffee Roasters at 17:30, Xưởng 1925 at 21:00, Minimal at 21:30. Only Alam and Nora run to 22:00. This is the largest and airiest of the five: no air conditioning, but windows on all four sides let the sea breeze through and it stays cool all day, with generous natural light and a raw fit-out. The coffee is professionally made, and there is cake and a short brunch list. It is the one roastery where you can sit for hours or study in a group. The flaw everyone meets: parking is tight.

A pared-back room, with an air-conditioned space that smells of coffee and an outdoor area. Polite staff, fair prices. Open 6:30–22:00, which also makes it the latest-closing of the five.

It is a small shop whose real seating is the pavement under the trees, and sitting there early in the morning watching the street is the best thing about it. Espresso 30,000₫, quick service, and they keep oat milk for cappuccinos, which few places in Nha Trang do. The Aerocano is the unfamiliar one worth trying. There is a bakery next door, and you can bring what you buy across. Shuts 21:00.
