Nem nướng belongs to Ninh Hoa, about 30 km from Nha Trang, but you can eat a proper version of it in the city itself. Dang Van Quyen is the name both locals and visitors mention most.
How it works: charcoal-grilled pork comes out hot and you roll it yourself with rice paper, a shard of fried rice cracker, fresh herbs, green banana and pineapple, then dip it in the thick peanut-and-soy sauce. That sauce is the deciding factor — every shop has its own recipe, and this one's gets the most praise.

If you want it where the dish comes from, that is Ninh Hoa, about 30 km north of Nha Trang — the same direction as Doc Let and Monkey Island, so it folds into a day spent north. But the city version is faithful enough that the dish alone does not justify the trip.
