What you take home from Nha Trang splits in two, and the first group is the one to buy. Dry goods keep for days, need no refrigeration, and travel in hand luggage: chilli-glazed squid, semi-dried squid, dried yellowstripe scad, dried shrimp, mango sheets, cashews. Wet and fresh goods taste better but need a foam box, ice and a short flight: fish cake, fermented pork, frozen seafood. Knowing the difference is how you avoid abandoning a bag of chả cá at security.
The four biggest shops are within walking distance of the centre, and they are busier than most restaurants on this site. Ngọc Linh, in block G17 beside Đầm market, is the busiest of them; its sign lists the four things it sells: dried seafood, fish cake, fermented pork, nuts. Xóm Biển at 60 Phan Bội Châu is the tidiest, with white-and-blue shelving, labelled jars and its own freezer. That suits buying gifts that need to look the part. SEAVY at 104 Nguyễn Thị Minh Khai and Sáu Ngọ at 41-43 Ngô Gia Tự are large dried-goods dealers with the stock stacked in glass cases. Buy in quantity and ask about the wholesale price.
Tamarind-glazed and semi-dried squid are the things most worth buying: they taste good, they keep, and you will not easily find the same quality elsewhere. Fish cake is another matter. Nha Trang is known for chả cá made from fresh sea fish, but it is a wet good. Cô Thảo specialises in Vạn Giã fish cake and also sells dried scad and squid, with the bay behind its stall. Mango sheets are the sweet one: ripe mango pulped, spread, dried and rolled, a Cam Lâm speciality more than a Nha Trang one. A wholesaler at 16B Cổ Loa sells retail as well, and you can watch the whole process, from yellow sheets on drying trays to the finished rolls.
Bird's nest is the most expensive thing here and the one to be most careful with. Nha Trang is Vietnam's best-known island-nest region, and a box can cost as much as the flight. This page does not rank nest quality, because that takes a hand and an eye in the room. But one fact is checkable: the shop at 116 Nguyễn Trãi belongs to the Khánh Hoà Salanganes Nest company, the state enterprise that works the island caves. Its sign carries the company's phone, fax and website. There is also Lidanest in Vĩnh Điềm Trung selling raw nest, ready-cooked bottles and gift boxes. If you do not know nest, buying somewhere that issues an invoice under a known name is the clearest way to cut the risk.
Four things before you buy. One, ask the per-kilo price and fix it before anything is weighed. It is the same habit that pays at Đầm market, and worth more than any other tip. Two, dry goods fly and wet goods do not, so if you want fish cake, ask the shop to pack it in a foam box. Three, ask for vacuum sealing. The larger shops all have a machine, and vacuum-sealed dried squid will not scent an entire suitcase. Four, the market is cheaper if you can haggle. A shop with prices on the shelf costs a little more and hands you the certainty instead.
Also under Shopping: the supermarkets and the malls. Lotte and Go! both keep a packaged-speciality aisle, useful for a last-minute buy on the way to the airport. The nem comes from Ninh Hoà, and Đầm market sells the same goods at market prices.

This is a house rather than a shopfront, so ring before going. Mango sheets are a Cam Lâm speciality more than a Nha Trang one, but nearly every speciality shop in the city carries them.
