Overview

Bánh mì isn't a Nha Trang specialty, but it's something you'll need: carts open from 5 in the morning, before the fish noodle shops, and some sell late into the night. It's the answer for an early breakfast before a boat, and for a late one after coming back from the islands.

The local version usually includes fish cake. Logical in a coastal city, and the point of difference from Saigon bánh mì. Carts are everywhere in the central district, thickest around Nguyen Thien Thuat and Cho Dam.

The sixteen shops at the foot of the page answer the price question themselves, because each has its own board: 17,000₫ for shredded fish cake at Thanh Thanh, 18,000–25,000₫ at most carts, and 65,000₫ for the blackened squid-cake roll at Cui Banh Mi. Near enough four times the first. Two of them will sell you the bare baguette for 4,000₫ if the bread is all you want.

It solves two specific problems: breakfast before an 8am boat to the islands, and a late meal after coming back when everything else has packed up. The fifteen shops at the foot of the page are spread across the city, so choose by where you are standing, and they include a vegetarian one, two fish-cake ones and a roast-pork one, not fifteen versions of the same roll. Choosing is simple: sit where the locals are, because a busy stall means constant turnover and nothing sitting around. Skip an empty one during the rush, however large its sign.

    123 Ngo Gia Tu, open 5:00 to 22:00, which makes it the only place here where you can buy a fish-cake loaf at nine at night. The fish cake really is springy and good, the herbs fresh, and the special is 50,000₫. But the room is the weak part: tight and hot, and at the rush you may wait 10–20 minutes for a table. Takeaway is the tidiest way to have it.

    Ba Lẹ is a familiar name here and several shops use it. This one is at the Ngã 7 junction, another sits at 96 Thong Nhat. Go by the number, not the name. The board splits every filling into a small and a large, and it includes bánh mì cá kho, braised fish, which few carts sell. Two photographs of that board taken at different times differ by about 2,000₫ a roll, so read the figures as a range: roughly 15,000–35,000₫ depending on size and filling.

    84 Ly Thanh Ton, and this is the one I would leave for last in this quarter. The grilled-pork loaf is middling: hard bread, unremarkable meat, while BAMI and Ngàn Hương in the same part of town are plainly better. Worse are two things that recur: the price on the board differing from the price charged, and treatment across the counter that is enough to stop people coming back. If you do go, check the price before ordering.

    73 Bach Dang, open 6:00–22:00. The bread here has a thick crumb, a moderate crackle and a real smell of yeast. A different thing from the usual thin loaf, and its genuine strength. The fillings are generous: beef fillet with cheese at 45,000₫, chicken in a well-seasoned sauce. The menu is wide and some lines run at half price. Two things to know: the cheese tends to be meaner than the meat suggests, and the manner across the counter is brisk, even when the ask is only for extra chilli sauce.

    141 Hong Bang. The name is the signboard, not anyone's verdict. A small shop on a corner, so it is airy and easy to find, with car parking. Grilled pork is the strength; the pulled-egg loaf with pork floss is what people come back for. There are seats and there are drinks, which makes it one of the few places here where eating in is a real option. Cheerful staff, fair prices.

    8 Hong Bang, the longest-standing cart on this list. Takeaway only, with no tables. 10,000–20,000₫, the cheapest here. The loaf is small but dense and generously filled, so one is a meal; grilled pork is what regulars order. If you cannot eat much bread, ask them to hollow out the crumb; they will. They work fast. One thing to expect: it is busy and the manner across the counter is brusque, which does not stop the regulars.

    Same street as Banh Mi Cui but at the other end: number 73 and number 164. Sixteen fillings on a Vietnamese–English–Korean board, two of them marked vegan: mushroom with mozzarella, and braised tofu with pineapple and cashew. Beside the rolls it sells tteokbokki, gimbap and bánh tráng lụi at 10,000–20,000₫. This one is pitched at Korean visitors.

    Number 04, Ngo Gia Tu block. This is the best loaf on the list, and for a specific reason: the bread does not dry out the way it does elsewhere, and the seasoning is judged well. Clean, with friendly and attentive staff. A detail that counts in a tourist city. They deliver, and they are quick. If you want a loaf that will certainly be good rather than a gamble, order here.

    3 Hung Vuong, and the only vegetarian loaf on this list. If you eat vegetarian, or you are here on a full-moon day, this is the answer. The bread is crisp and the filling carefully seasoned, and foreign visitors seek it out because it is the only one they can find. The owner sells from the Hung Vuong pavement. Two things to know: she closes early once it is gone, so a late evening often means a wasted trip, and some find it dear for vegetarian food.

    14 Yersin, open 5:30–11:00. Breakfast, and it closes when it sells out. This is the fish-cake loaf worth eating here: springy cake with a real sea flavour, crisp fragrant bread, ordinary prices. One very practical note that no article carries: they do not trade on the first and fifteenth of the lunar month, so if your day falls on one of those, choose elsewhere. Some days the fish cake is thinner than usual.

    Roast pork with crackling, quite unlike the chả and pâté fillings elsewhere here. But this is first of all a roasting kitchen selling by weight: the board quotes belly at 450,000₫ a kilo, a half-kilo set with bánh hỏi at 439,000₫, and whole pigs to order from 2,350,000₫. It posts no price for a single roll, so ask before you buy. It stands down alley 43 off Van Don.

    18 Le Thanh Ton, open 6:30–22:00. An old Nha Trang name, and different from everything else here because it is a bakery rather than a cart. Roomy and clean, with seating and drinks served in; besides bánh mì there are cakes, savouries and steamed buns, and the pâté chaud is the thing to order. The hamburger loaf runs about 15,000₫ normally and 25,000₫ over Tet. Some things fall short: one of the steamed buns has an odd texture, and service is uneven from branch to branch.

    A grilled-pork bánh mì cart at 34 Nguyen Thien Thuat, opposite the lane with Ốc Ngon. A roll is 15,000–20,000₫, the pork is fragrant off the grill, the dipping sauce is judged well and the herbs cut the fat, and this roll beats the better-known bánh mì shops in town. Two things to know first: the price is low and so is the amount of meat, the crust is soft rather than shattering, and the seller is not chatty.

Addresses come from each shop's own Google Maps listing, and the Open map button opens that shop's pin rather than running a search. 18 shops on the site have no listing we could confirm, so they have no button: the address lookup returned a different business, and a button that points at the wrong place is worse than none. A Google score appears only when Maps carries both the score and the number of reviews — a bare average cannot be weighed, so this page leaves it out. Street-food stalls change hours and close without telling anyone; call ahead if you are travelling across town.
