Overview

Cơm gà is the default lunch in Nha Trang, and what decides it is not the chicken but the rice: cooked in the poaching stock and the fat, so it comes out golden, loose and lightly rich, worth eating on its own. Where the rice turns soggy or dries out, the shop has already lost, however good the chicken.

A plate is rice, chicken either shredded or chopped, herbs, pickled papaya and carrot, with a bowl of broth and a dish of chilli on the side. The chicken comes two ways: poached and pulled, soft and sweet, or fried to a crisp gold skin. What nobody warns you about, and what most separates one shop from another, is the buttered egg sauce served alongside. Where it is made well it lifts the whole plate, and at Hà Cơm Gà or Cô Phin it is the reason people come back. Ask for the pickled onion and garlic if the shop has them.

If you only eat one plate, go to Cơm Gà Phố Hội at 67 Tran Nguyen Han: it does the basics right. Loose dry rice, chicken poached just far enough with the skin still snapping, dipped in ginger fish sauce, and a shredded-chicken plate with two side dishes still comes under 130,000₫ for two. The cheapest that is still good is Cơm Gà Đài at 51 Yersin, 35,000₫ a plate and full of locals at lunch; the trade is that it is small, so at the rush the tables go uncleared and the food comes slowly. And Cơm Gà Tùng on Huong lo Ngoc Hiep is the one many locals name first: crisp chicken that is not greasy, with plenty of ginger in the sauce. Say so in advance if ginger is not for you.

The best-known name is Cơm gà Trâm Anh at 10 Ba Trieu, an old shop that every article mentions. It still eats well: springy rice, free-range chicken with some chew, that distinctive knot of rich sauce, but 70,000₫ a portion is high for this dish in Nha Trang, and the portion is not large. Going for the name, and for a room that has been refitted and is clean, is fair enough; if what you want is a good plate at a local price, the three above answer better.

A few worth avoiding. Cơm Gà Hai Chùa at 9A To Vinh Dien charges 140,000₫ for a roast-chicken plate and 180,000₫ for a steak: three times the going rate without being three times as good, and several people describe being brought the wrong cut and still billed for the dearer one. Quán Cơm Gà Ngon at 30 Ly Tu Trong is the same story: 70,000₫ a plate, clean enough, but twice its neighbours for a plate that is only average. Cơm Gà Cô Phin at 21 To Vinh Dien cooks well and makes a good buttered sauce, but ask the price before ordering a leg portion, the menu says 170,000₫ and the bill can run further than you planned. The rule of thumb: a decent plate in Nha Trang sits between 35,000₫ and 70,000₫, and a number well above that is worth querying.

Ngo Gia Tu, Yersin and To Vinh Dien all sit inland rather than on the Tran Phu seafront, which is why the prices are what they are. From a beach hotel it is a 10–15 minute walk or a short Grab ride. Most of these shops are lunch places; for an evening plate, Hà Cơm Gà runs to 21:00 and Cơm Gà Núi 1 to 20:00, and the rest close when the rice runs out.

It is roomy, with high tables, clean, and jars of pickled onion and garlic on the table. A small thing that does a lot. The fish sauce and the buttered sauce are genuine strengths. A shredded-chicken plate is 40,000–45,000₫, a whole bird 400,000₫ for a group. The fried chicken can come out dry, so the poached and pulled version is the safer order.

It still eats well: springy rice, free-range chicken with some chew, and that distinctive knot of rich sauce. The place has been refitted, so it is roomier and airier with an air-conditioned floor upstairs, and the owner is spoken of warmly. But 70,000₫ a portion is high for this dish here, and the portion is enough rather than generous. Two leg plates, a salad and two drinks runs about 290,000₫. Going for the name is fair; for the same quality at a local price, Phố Hội, Đài and Tùng all do better.

There is an air-conditioned room and car parking, and it faces a primary school, so the kerb is busy at midday. Opens at 9:00. The rice pot is occasionally under-done, so if you arrive mid-service it is worth asking for a fresh batch.

A roast-chicken plate at 140,000₫ and a steak at 180,000₫: around three times the going rate for chicken rice in town, with flavours that do not follow the price: a generous plate of chicken, but plain, and tough beef. The rice itself is well cooked. Ordering the roast and being given breast does happen, so say clearly what you want and check the bill.

    43 Au Co. A genuinely family-run shop: relatives on the floor, careful with customers, with plates from 40,000 to 70,000₫ depending on the cut, and a bowl of quail-egg broth alongside. The chicken is firm and fragrant, and the buttered egg sauce goes well with it. The rice is where opinion divides: some find it soggy, some find it dry, and the portion is smaller than the going rate. If you like your rice dry and separate, this is not the first place to try.

It fills with locals at lunch, which is the best sign there is. The trade is that it is small and busy: tables go uncleared, food comes slowly, and orders occasionally get lost. Alone and unhurried, this is the cheapest good plate in the city; in a group or in a hurry, get it to go.

The fish sauce here carries a lot of ginger: good if that is your taste, sharp if it is not. It gets busy, so the food can take more than ten minutes and arrive cooler than it should; ordering to take away avoids that. There is a second branch over on Tran Quang Khai.

They deliver.

Roomy, clean, quick, and it packs well for takeaway. If you have eaten Hainanese chicken rice in Saigon, this is close to that memory. It prices above the local going rate, and the room gets tight at lunch. Come to eat something different, not to eat the Nha Trang plate.

Service is brisk and the place is always busy. But this is chicken with fat-fried rice, which is a different dish from the Nha Trang plate cooked in poaching stock: if you came here to eat the local version, this is not it.

Prices are reasonable but the meat is thin for the money, and there are accounts of ordering grilled chicken rice, receiving the leg plate, and being billed at the higher price, repeat your order when the plate lands. A place to try, not one to travel for.

    30 Ly Tu Trong. The name is the signboard, not anyone's verdict. The room is airy and clean, the service fine, and the hủ tiếu Nam Vang here is actually good. Order that if you go in. But a 70,000₫ chicken plate that is only a little above average costs twice what its neighbours charge, the chicken is sometimes dry and the rice hard, and cars have to park in the road. It has closed for spells without the map catching up, so ring first.

The strengths are the chicken steamed in first-press fish sauce and the fish-sauce-finished version: crisp skin, still juicy inside, meat with the chew of free-range bird rather than the mushiness of battery chicken, and fried rice that stays moist. Small but airy and clean. This is a trip you make on purpose rather than a stop on the way.

It does the basics right: the rice loose, dry and lightly glossy, the chicken poached just far enough that the skin still snaps, dipped in ginger or peppered fish sauce. Rice, congee and glass noodles are all served, and the chicken-offal rice dressed like a salad is worth adding. A shredded-chicken plate with a dish of immature eggs and drinks came to about 125,000₫ for three. New, clean and central.
