Overview

Nha Trang goes to bed earlier than visitors expect. The noodle shops clear away by lunchtime, the chicken-rice places shut when they sell out, and by ten at night most of the centre has pulled its shutters down. But the city keeps a separate layer of places that only open when the first layer closes, and knowing a few names beats wandering.

Read this page by the clock, not by the dish. Bánh Canh Đêm Cô Hường opens at 22:00. It starts selling when most kitchens stop. Cold Beer runs to 4am, Phố Khuya to 3:30, Nui & Cháo to 2:00. Cháo Đêm on Đặng Tất, by contrast, only works 18:30–23:00, so despite the word "đêm" in its name it is a dinner.

Two clusters matter. Nguyễn Thị Minh Khai holds Phố Khuya at 126 and Cold Beer at 161, a few hundred metres apart and both past three in the morning. The Hòn Chồng quarter to the north has Cá nướng cô Uyên, grilling until 23:00 beside the promontory.

If you want to sit and drink rather than eat and go, the four latest places in the city are on the drinking page rather than this one: Gió Khuya runs to 4:30, Út Mập to 3:30, Hồi Xưa to 3:00, Ngan Giả Cầy to 2:00. All long tables, beer, room for a group.

That is what they genuinely do well, fresh and firm and properly seasoned, and sold in several sizes so it works for two as well as for a group, rather than the whole kilo-plus fish other grill houses insist on. Local prices. The rest of the menu is middling and short, so a big group will find the choice thin. Warm staff.

    2 Hai Ba Trung in Xuong Huan, by Dam market. A long-standing Chinese noodle shop, and the one thing on this list that is not a drinking house but a bowl of broth late at night. Order the stewed duck noodles, or the wontons. The broth is clean and sweet, the portions large enough that plenty of people cannot finish, and prices run 50,000–95,000₫. Small, in the manner of an old Chinese household, clean and quick.

This is a drinking house in the plain sense: you come because there is space and because whatever you ask for exists, not for one particular dish.

    161 Nguyen Thi Minh Khai, on a central main road. It trades through the night, keeps live seafood, and has a television showing football late. If you want a late match with something to eat, this is the clearest choice here. Friendly owner, roomy inside. Two things to know: it has moved premises and is quieter than it was, the beer and food price slightly above the neighbourhood, and the food is slow even when the room is not full.

Order the full bowl of nui at 40,000₫: pork bones, crisp pork crackling and a soft-yolk poached egg, in a well-seasoned broth, with tender beef and bones. The pork knuckle has bite rather than chew. Clean, quick, and still busy at midnight, which is what makes it dependable at one in the morning. The crackling is sometimes over-browned.

    14 Dang Tat, down a lane, open 18:30–23:00. This is the one I would recommend most here if you want something light late: plain rice congee with a long row of things to add, and the two to order are the mackerel and the mushroom-with-chickpea version. Cheap. Small and quiet, and the owner's taste for music means there is usually jazz on. An atmosphere unlike anything else on this list. A kind host.

    It opens at 22:00. Not closes, opens. Bánh canh with crab, fish and quail eggs, central on Quang Trung, running through the night. It is the most literally late-night address on the list: at one in the morning it is mid-shift. This page carries no photographs of it yet.
