Overview
The first thing to know about coffee in Nha Trang is not the sea view, it is the clock. Thirteen open at six in the morning, earlier than most breakfast shops, so you can eat a bowl of fish noodles and sit straight down afterwards. The earliest is Anh Coffee Roasters at 5:30. At the other end, 22:00 is closing time for more than half the city, so if you eat late and then want to sit, you have to choose deliberately. And three places shut before 18:00, two of them among the best coffee in town, so do not save those for the afternoon.
The price range runs thirteenfold, and knowing that in advance saves a surprise at the till. At the low end, a black machine coffee is 20,000₫ at Vũ Garden in the Mipeco estate, 22,000₫ at Tiệm cà phê on Doan Tran Nghiep and 23,000₫ at Hòn Chồng View beside the rocks. All three proper shops, not cheap because they are poor. At the top, Alpaca serves a European breakfast at 135,000–285,000₫ a dish with a wine list, Sailing Club charges a cover in the evening, and The Cloud Bar at 163 Nguyen Thien Thuat is the most expensive address on any of these pages.
The thing most worth saying, because it wrecks other people's plans: the guides to Nha Trang's cafés send readers to a lot of shut doors. Across two popular articles, a third of the places that could be checked have closed permanently. Including Lam Cafe, whose bamboo architecture won a prize, and Rainforest, both of them headline entries. Six more give the wrong house number, worst of all Trốn Nha Trang: the article says an alley off Tran Phu, while the door is at 46 Le Quy Don. The list below leaves out the ones that have closed, and where two addresses are still circulating, the note says which to follow.
Some of these are not what their names suggest. Amore Gardens is a dog café rather than a garden one. There is a separate area for them and the house dogs move among the tables. Trà Sữa SEA 50 is a milk tea shop; do not go looking for a serious coffee. Alpaca is closer to a brunch restaurant than a café, and is the only place here with a children's menu. Mokuzo Kafe on the Phong Chau hill has been renamed Cloud Hill, and THAN Cafe is down to its Bach Dang branch. All three are easy to get wrong if you navigate by signboard.
Seventy is a lot to read through, so if you want the short answer: for the coffee itself, the five roasters; for an early start, the six-o'clock list; for a seat after 22:00, the late list; for somewhere near your hotel, the tourist quarter or the northern run; for somewhere worth sitting, the cafés with a view; and if you just want the fifteen people talk about most, they are here. Salt coffee and cold brew on the menu; the bar sits at the entrance so you can see the machines. Open 07:00–22:00, which makes it work morning or evening, and it is within walking distance of the central hotels.

The food is adequate. When it fills, drinks come slowly. One cocktail took nearly 45 minutes. Come for the sand and the noise, not for the prices.

Not everyone agrees: some come for the Latin dishes and find them short of the billing.
