      Fish noodles before eight, first thing

      The good fish-noodle shops sell out by nine or ten, and you have one morning. This is the dish Nha Trang gets right that nowhere else does: springy fish cake in a clear broth built on fish bones rather than pork. Afterwards the sea is a few hundred metres away.

      Trần Phú at midday: get in, do not lie out

      The beach is in the middle of town, so it costs no travel time. At midday the sun is hard, so the way to use it is to get in the water and then get into shade, not to lie on the sand. Loungers and umbrellas are for hire along the front; ask the price first.

      A mud bath — what replaces the island day

      With one day an island trip is impossible, but a mud bath is not: Tháp Bà is about 4 km out and takes roughly two hours including the journey. It is a thing Nha Trang has that almost nowhere else in Vietnam does, which earns it half your afternoon.

      Nem nướng, then the night market if there is time

      Nem nướng is rolled at the table, eaten quickly, and the shops are central, which suits someone about to leave. With an hour to spare, the night market on Trần Phú runs to 23:00 a few minutes' walk away; haggle, because nothing there is labelled.
