    The centre and the seafront

      Start before 8:00. The good fish noodle shops sell out by 9 or 10, so this is the first thing you do, not something after a lie-in.

      Long Son Pagoda and the white Buddha

      Climb the 152 steps up Trai Thuy hill for the whole city. Go early in the block. The steps are fully exposed. Stop at the Stone Church on the way back; it's a few minutes away.

      Tran Phu beach

      After 16:00 the sun softens and the beach comes back to life. Swim, then walk the seafront promenade. Nothing to travel for. The sand is below your hotel.

      Nem nướng, then a seat on the sand

      Roll your own nem nướng for dinner, then walk over to Sailing Club and take a seat on the sand. Before 21:00 it's still calm; after that it turns into a loud beach club. Pick the evening you want.

  2. Day 2

    Out to the islands

    Note: Book the tour the day before and check the forecast. Rough seas mean cancellation, which is why the island day belongs early in the trip, so you keep a spare.

      Hon Mun — snorkel the reef

      Boats leave Cau Da pier around 8:00. The water is clearest in the morning before the wind rises, so the snorkelling leg usually comes first. A mask and snorkel are enough.

      If snorkelling at Hòn Mun is not enough, seven dive centres in the city sell a guided try-dive one-to-one, no certificate needed. Five of the seven are in the tourist quarter, so you can book the day before. Ask three things on the phone: divers per instructor, whether anyone speaks your language, and whether the marine-park fee is included.

      The afternoon leg of a tour is usually water sports or one more island. Going solo, the mineral mud baths on Hon Tam are a sensible way to wind down after half a day in the water.

      Back on shore, eat seafood in the lanes around Cho Dam rather than the beachfront restaurants. Pick your seafood, agree the per-kilo price before it's weighed, then have the shop grill it.

  3. Day 3

    North: Cham towers and the north shore

      Opens at 8:00. Go early while it's cool and empty. Bring something covering shoulders and knees, or borrow a robe at the gate. The forecourt looks straight down at the Cai river mouth.

      The squid bánh xèo places cluster around Thap Ba and 2 Thang 4 street. Same run, no detour. The pancakes are small, so order in rounds and keep them hot.

      Pham Van Dong runs higher than the water, so the cafés up here see the whole coastline. Arrive around 16:30 to pick a seat before it fills.

      Bánh căn only appears in the late afternoon. This is your window. Afterwards, hit the dried-goods aisles at Cho Dam for fish sauce, semi-dried squid and dried shrimp: cheaper than the specialty shops on the beachfront.

Where to sleep for this plan
